  • 60ml olive oil
  • 1 tsp. lime rind
  • 60ml lime juice
  • 1 clove garlic, crushed
  • 1 ½ cups fresh coriander
  • 1 red chilli, seeds removed and thinly sliced
  • 6 chicken breasts fillets. Cut into 3cm cubes
  • 2 limes cut into wedges



Combine olive oil, lime rind, lime juice, coriander, chilli and garlic in a large bowl mix until well combined.

Add diced chicken and toss well to coat the chicken pieces.

Cover and marinate chicken for 3-4 hours.

Thread chicken onto skewers.

Place onto a pre heated grill and cook for 2-3 minutes on each side until chicken is cooked.

Serve with steamed rice and steamed green beans. Garnish with lime wedges and fresh coriander.
