Description
(Allium ampeloprasum var ampeloprasum)
An easy-to-grow bulb with a strong garlic flavour that is great as an herb or baked as a vegetable. The plant is a leek with a large bulbous base from which stems and roots are produced.
Flavours/Food Partners
Chives, basil, oregano, ginger, coriander, chilli and rosemary. Enhances almost all food types as an herb but also works well as a baked or fried vegetable. Use whole, sliced or grated in curries, stir-fries and most Asian dishes. Also useful for salad dressings, sauces and marinades.
Health/Cooking/Medicinal
A versatile herb that enhances other herbs and is an essential part of many different cuisines. It can be added at any stage of cooking and is very good for your health, with modern research showing regular intake of Alliums will reduce the risk of cancer and heart disease. Also good for building resistance to colds and flu.
Landscaping/Planting
Elephant Garlic will grow in most good soils but needs regula「moisture and part to full sun. Excellent large flowering plant for a perennial garden.
Cultivation/Fertiliser
Bulbs can form from six to twenty-four months after planting. Harvest when the flowers have died, and the leaves start to turn brown. It will usually be around 1.2m at this point. It needs regular applications of Seasol and Powerteed from spring to autumn to keep the plant healthy and growng well.
