(Glycyrrhiza uralensis)

A herbaceous perennial shrub with purple flowers in summer and a sweet root with a strong anise flavour.

Flavours/Food Partners:

It is a strong flavour that is mostly used for sweet dishes. It partners well with ginger, chilli, lime, lemon and chocolate. Can be used in savoury dishes mixed with ginger, tamarind and galangal. It is also widely used as a snack mixed with salt.

Health/Cooking/Medicinal:

Liquorice syrup can be made by placing roots in boiling water and then reducing off most of the water. The resultant syrup is many times sweeter than sugar and has many medicinal benefits. It is one of the fundamental herbs in the traditional Chinese medicine palette. It has its own benefits but is also a key addition to moderate otller herbs. The flowers and plant are not edible.

Landscaping/Planting:

This perennial likes full sun and deep well drained soil. Responds well to summer moisture and regular feeding.

Cultivation/Fertiliser:

Harvest roots when plant is 3 years old. Give regular applications of Seasol and Power Feed to keep it producing and growing well.
