A large shrub with masses of sweetly perfumed, cream flowers and green & white foliage.
Flavours/Food Partners
The flowers can be used in salads, fruit dishes like muffins, compotes and jellies, or added to punches, cordials and champagne. Partner well with Stevia, Mexican Tarragon, spearmint and lemon flavoured herbs. The cream flowers look good with the blue borage, orange nasturtium and purple heartsease flowers.
Health/Cooking/Medicinal
Like so many of the older herbs, Elderflower is purported to cure a wide range of problems. It is especially recommended for all those issues with the respiratory organs associated with colds and flu. The berries are very high in Vitamin C so are also good as both curative and protective herbs for most winter ills.
Landscaping/Planting
Plant in almost any spot in the garden and does well in poor dry soils and prefers full sun. Needs a bit of space and if planted at 1m centres will make a quick and thick hedge.
Cultivation/Fertiliser
Require regular applications of Seasol and Powerfeed. Water during summer months when dry.
