1 bunch of fresh mint
Pinch of salt
4 tablsepoons white wine vinegar
4 tablespoons boiling water
1 level teaspoon caster sugar
Strip the mint leaves, sprinkle with salt and chop finely. Place in jug, add the sugar and pour over the boiling water, stir and leave to cool. Stir in the vinegar and taste. Add more water or vinegar and adjust to suit your taste.
