Mango Habanero Sauce

Ingredients

  • 2 tablespoons peanut oil
  • 8 ripe mangoes, peeled & diced.
  • 1/2 cup diced white onion.
  • 1/2 cup diced carrot.
  • 2 fresh habanero chillies (membrane & seeds removed if you wish!)
  • 1/2 cup champagne vinegar
  • 1/2 cup tomato sauce
  • 1/4 cup sugar
  • salt to taste

Method

  1. Heat oil, add mangoes, onion, carrot and chillie. Cook for about 10 minutes over medium heat until onions soft and translucent.
  2. Add vinegar, tomato sauce and sugar. Bring to slow boil and simmer for 35 to 45 minutes.
  3. Remove and add salt to taste.
  4. Transfer to blender and pulse sauce. Strain through medium strainer.
  5. Add a little water if too thick.
  6. Used for seafood, lobster or scallops. Also makes a good BBQ sauce.
