A slow growing evergreen tall shrub that if left untrimmed will eventually grow into a medium sized tree.It has dark green aromatic foliage and is tolerant of tough conditions once established.
Prefers a moist well drained soil in a sunny to partly shaded position. For the best results fertilise with a long term slow release fertiliser in early spring and prune to shape when required.
Bay is one of the herbs that can be put into an Italian sauce at the beginning and left in for the entire simmering process. It is so rich and the oil is not so volatile that the leaf will impart flavour throughout the cooking process and not be eliminated by the heat and vaporisation during the cooking process, unlike basil.
